May exited, leaving behind mud puddles. June started with thunderstorms, hot days, followed by, yes, more thunderstorms. Working for and with seniors has made me more aware of their concerns. For some, the basics of life are hard to come by. The Nutrition Assistance Program for Seniors (NAPS) provides a nutritious monthly food package containing canned fruit, vegetables, juices, dry and canned milk, American cheese, canned meat, peanut butter, dry beans, cereal, rice, instant potatoes or pasta. Each box is valued at about $50. To qualify for the United States Department of Agriculture (USDA) Commodity Supplemental Food Program, you must be 60 or older, live in Minnesota, have gross income of less than $973 for a household of one or $1,310 for a household of two. You do not have to be a U.S. citizen. To check if you are eligible, call toll-free at (800) 365-0270. If you qualify, you may sign up at the time of the phone call. Birthdays for May and June were celebrated with birthday cake on Tuesday, June 8. Former Kimball resident Edith (Cornell) and her husband Bill Splan are visiting from California. I enjoy listening to them as they reminisce with the diners. Edith knew both sets of my great-grandparents. Tom Ehlinger and Donn Driver, disaster coordinator for Kimball, shared severe weather and tornado emergency information with the diners June 21. Should the need arise, we would all gather in the kitchen and close the serving windows and doors. On behalf of the diners, I thank you both for your time and information. Scandinavian Day was a success. Early coffee and pop were available, along with pickled herring with rye crackers and Finnish cardamom bread. Tables were decorated with Scandinavian souvenirs and heirlooms brought in by diners. door prizes went to Betsy and Bob. Barb Root performed traditional Scandinavian music and read a Finnish “Alphabet Poem.” Between songs and reading, Barb shared interesting Scandinavian tidbits. Thanks, Barb. June is ending and the Fourth of July is a few days away. Many people think of the Fourth of July as being the halfway point of the summer. Looking for a high fiber salad? I came up with this after trying something similar in Missouri. oooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooo Kidney Bean Salad o One 15-ounce can of kidney beans, drained and rinsed. o Three hard-boiled eggs, chopped. o 1/4 cup diced onion. o 1/2 cup diced or sliced celery. o 1/2 cup sliced black and/or green olives. o One teaspoon mustard. o 1/2 cup plus two tablespoons of Miracle Whip. o 1/4 teaspoon of seasoned or plain salt. o 1/4 to 1/2 teaspoon of pepper. o Two tablespoons of relish (or zucchini). Mix ingredients together in a bowl.
